I recently have a secret obsession: watching cooking shows on YouTube. It ain't any helpful for me, as it makes me really hungry and it makes me wanna eat, even in the middle of the night!
That is when I started to put on some weight. Oh no!!
I'd stumbled upon a video which teaches you how to make cupcakes! I got so excited after seeing the video because:
1. It looks so beautiful
2. It looks absolutely yummy
3. And it looks really easy to make!
So off I went to try out the recipe. Here are the ingredients which I needed to make the cupcake. I had tweaked the original recipe a little and made these few changes:
1. Lessen the amount of sugar
2. Had blueberry filling inside the cupcakes

Ingredients (Makes 12 Cupcakes):
Original recipe here
150g of sugar
110g of unsalted butter/majerin (soften to room temperature)
2 Eggs
2 tsp of Vanilla extract
2 tsp of baking powder
1/8 tsp of salt
170g of All-Purpose Flour @ Multi-Purpose Flour
80 ml of Whole Milk
The ingredients
Process:
1. Preheat the oven to 175 degrees Celcius. Line the cupcake tins with the liners and set aside.
2. Cream the butter and sugar using an electric mixer until smooth and creamy.
Mix them until sugar is well incorporated with the butter
3. Add the eggs and vanilla to the butter mixture and continue to beat using the electric mixer
Tip: Break the eggs in a separate bowl to ensure that no bad eggs are mixed together with your butter to avoid wastage.

4. Add the dry ingredients (Flour, salt and baking powder) and fold them into your wet mixture using a spatula. I find folding easier as there would not be any chance of overmixing, which would lead to dry and tough cakes.
5. Upon folding the dry ingredients in, add the milk and continue to fold until everything is well combined.
And the batter is completed
It's perfectly normal if the batter has lumps as we are not handling with professional equipment.
6. Scoop the batter into the lined cupcake tin 1/2 way through. Here comes the fun part: Adding a dollop of jam in the center of the batter. It will give a hint of surprise to whoever that are eating the cakes. I put Blueberry jam in mine.

7. Top if off with the remaining batter until it is 3/4 full. We want to give them space to rise.

8. Bake them in the preheated oven at 175 degrees Celcius for 20 mins, or until a toothpick comes out clean from the middle.

9. Take them out from the oven and leave to cool. Don't they look scrumptious?

You could either eat them plain, or frost the cupcakes with butter cream frosting. The cupcakes were super moist, with a blueberry surprise in the middle. These are not too sweet, and are perfect for those who are watching their sugar intake.
